Finding real cider and perry.

Well-kept cider and perry should be served with good disclosure of its ingredients and description of its style and flavours.

Like any artisan product, a real cider or perry requires special handling and storage to ensure it is consumed at its best and should always be served fault free. Many are best stored cool.

Three tips for finding real cider and perry

No.1 Talk to the people behind the bar.

Talk to the people behind the bar. They may have extensive knowledge about the cider or perry on offer. They will advise whether it is a crisp and fresh cider which is best drunk chilled or if is a tannic cider with some astringency which is best drunk at room temperature and therefore left to warm in your glass for a couple of minutes.

Don’t let the odd blank look or negative experience dissuade you from persevering, it’ll help you identify the best places to seek out real cider and perry. An increasing amount of training is being provided in the hospitality industry about cider and perry, and you will soon learn where those places are.

No.2 Talk to the cider and perry makers! If you’re lucky enough to live near or have access to a great cidery, ask them to recommend which pubs they think take the best care of their hard work. You can’t get a higher recommendation than from the people behind your favourites. Visit the orchards and the producers. No.3 Learn some of the language of cider and perry. Many cider producers now identify ‘Not from concentrate’ on their labels. Those described as ‘keg conditioned’ , ‘bottle conditioned’ or ‘bottle fermented’ are indications of ‘live’ real ciders and perries.

Labelling transparency 

If its sweet, how did it get sweet?

  • by natural processes and the craft of the maker?
  • or by the addition of sugar, sweetener or juice?

If its fizzy, how did it get fizzy?

  • by natural traditional process?
  • or by the addition of artificial carbonation.
