Cider apple varieties

Depending on the cider making region British real cider is made by fermenting the juice of wholly cider making varieties, dessert apples or a mixture of both. 

Varieties of apple that are grown specifically for cider making contribute sweet, tart and bittering characteristics whilst providing aromatic and floral compounds.   

Cider apple varieties often  have whimsical and hilarious names Dabinett, Foxwhelp, Golden Ball, Kingston Black and Yarlington mill. Traditionally, ciders are often blended to develop a signature flavour profile for a vintage. Varietal ciders containing the juice of a single variety of apple allows the drinker to focus on any given varieties taste and aroma.
